Rice Wine Woes

I ran out of sake.  :'(  Worse: I bought some Sho Chiku Bai Ginjo sake at the liquor store because it was on sale, in a cute bottle, and I didn't know that Takara made Ginjo in their SCB brand.  The stuff has no aroma, and is bland to the point of almost being completely featureless.  Oh, it has some flavor: slightly bitter with lots of vanilla, almost like it was fermented with a vanilla bean in the moromi - but that's it.  Just not worth drinking, according to my educated palate.

So I have no choice but to make some more.  Oh, hey!  I'm already doing that!  What was I going on about?  Oh yeah, here's some pictures of a batch of homebrew sake in progress.

The growlers?  Well, let me check my calendar.  My schedule says I'll be looking to rack the sake off of the nigori sediment for pasteurizing and fining on March 11, so any time before that is fine.  Really, I may not need them, but there are a few variables and I like to cover all the bases.  A batch of sake calling for 12.5 pounds of rice is going to produce around 3 gallons of finished sake, which is actually more than 3 gallons when its in its nigori form.  I only have four of those 4L jugs, which I use for my secondary and settling when it comes to sake.  I can rotate through them just fine if I have 3 jugs full of genshu, but if I want to water any of it down in the yodan step then I'm going to need more vessels.  Not to mention if I somehow end up with more than 3 gallons...

...am I rambling too much?  I guess what I'm saying is that I could use a couple more growlers, and any time between now and March would be fine.

Not that anyone is interested, but here are the last of the pictures from the buildup of the main moromi ferment of this batch of sake.  From soaking the rice overnight, to draining it for an hour and then steaming...to adding water to cool and mixing the rice into the moromi.  I really wish the file attachment mod on this forum allowed for captions or descriptions, but oh well.  I figure if anyone has a question, they'll ask.

Look at the calendar, bro.  Aside from moving it to the fridge tomorrow, I'm not doing a darn thing with it for 3 weeks.  Just going to let it ferment out in the 寒作り (kan-zukuri) method, which takes a while because being kept at 50ºF slows the yeast down.  But the cold makes for a better sake, so it's worth it.  Remember my very first batch?  *shudder*  But hey, between now and then I need to make my way over to Arctic Brewing supply to pick up a fine mesh nylon bag (to press the lees) and a new hydrometer (Rachel broke my other one), and going with you or Rick will be my best bet to do so because Millie is working Saturdays this month (I think O.o).

Now return my game or I'll kick yer ass.  ;D

wow, that's so cool. are you gonna sell any?

i'm thinking about doing some home-brewing sometime. mostly beers or maybe like an apple-type drink.
honestly, if the joker wanted me to get banned from this website, i would. he is the epitome of human accomplishment. i love him.
